Virebo Souvignier Gris výběr z bobulí 2022 by Maňák Štěpán from Žádovice is a Moravian sweet white from the Slovácká appellation, category berry selection, 0.75 l bottle.
On the nose, dried apricot, mango and honeydew honey. On the palate, dense and sticky with residual sugar around 80 g/l, but the acidity keeps it all upright; a long finish with a salty note of aged balsamic.
Serve with a gorgonzola and pear tart, crème brûlée, or goose liver on toasted brioche.
Souvignier Gris is a PIWI grape variety; Maňák picks it as individual botrytised berries at the stalk, hence the low yield per hectare.
