Sevar jakostní 2022 from Vinařství Vaďura is a Moravian dry red from the Sevar grape variety, a Czech cross of Svatovavřinecké and Cabernet Sauvignon, Slovácká appellation, from the village of Polešovice, bottle 0.75 l.

On the nose dried cherry, cocoa and a hint of tobacco leaf in the background. On the palate medium dense, firm but ripe tannins, calm acidity, long finish with a bitter chocolate note.

Open with grilled beef rib, game in juniper sauce or mature Manchego-style cheese.

Sevar is a little-known Czech grape variety from the 1980s; Vaďura grows it on dry limestone soil, which gives it a structural skeleton.
