Hibernal výběr z hroznů 2023 from Vinařství Vaďura is a Moravian semi-dry white from the Slovácká appellation below the village of Polešovice, 0.75 l bottle.

On the nose: gooseberry, blackcurrant and a light grassy nettle note; the profile is very close to Sauvignon Blanc thanks to the grape variety's lineage. On the palate: medium-bodied with delicate residual sweetness, crisp acidity, long herbal finish.

Serve with salmon tartare with dill, asparagus with butter and goat's cheese in fresh thyme leaves.

Hibernal is frost-resistant; Vaďura grows it on a cooler plot in Polešovice where Veltlínské often used to freeze out.
