8 January 2024 the Kapka Wina team set off for Morawy — to the charming Kurdějov, where we have been working with ARONN Winery from the very beginning. The goal of the trip was to broaden our knowledge of sparkling wines produced using the champagne method and to build team spirit among staff from locations across Poland.
The champagne method — straight from the winemaker
At ARONN we saw and felt every stage of traditional sparkling wine production:
- First fermentation — must in vats, the base of the cuvée
- Second fermentation — in the bottle, under the cork, under pressure
- Ageing on the lees — months of patience before riddling
- Disgorgement — the final stage that determines the flavour
Winemaker Václav hosted a guided tasting for us, in which he showed the differences between various vintages and cuvées — it was a lesson that could not be learned from a book.
Second winery: IWAYINI VINERY
The afternoon belonged to IWAYINI VINERY — another producer with whom we have started working. The guided tasting allowed us to see the Morawy wine style from a different perspective: less fizz, more white still wines, mineral Rieslings, elegant Veltlins.
Why this trip
For us, meeting the winemaker in person is not folklore, it is work. When we recommend a specific bottle to a customer in Rybnik, Pszczyna, Tarnowskie Góry or Jaworzno — we need to know whose hands made that wine, what terroir, what year, what gesture of the winemaker.
